1 whole chicken
salt & pepper
fresh herbs (rosemary is great)
fresh garlic (3 or 4 cloves)
1 whole lemon, washed
Boil the lemon for about 5 minutes
clean the chicken, pat dry
dip the fresh herbs in the boiling water, just for a second
cut up the herbs, and mix with the garlic and salt and pepper
rub half on the outside of chicken, and place the rest inside. Pierce lemon several times with knife, then place in cavaty of chicken. Roast at 450 for about 45minutes to an hour. After about 10 minutes, move chicken around once to keep from sticking. Let chicken rest for about 10 minutes before carving.
