Hallo Kochprofis
Ich bin auf der Suche nach einem italienischen Rezept. Leider weiss ich den Namen nicht… nur, dass irgendwie Pasta mit Auberginen und Ricotta gemischt werden.
Kennst jemand so ein Rezept???

Pasta con Melanzane!

ich hätte da ein Rezept für Dich:
Pasta Con Ricotta E Melanzane (Ricotta-Eggplant Pasta)

Ingredients
Pasta, Penne** 350g **Barilla, Buitoni, De Cecco
Onion 250g
Eggplant 2 Large
Plum Tomatoes 250g
Ricotta 3 Tablespoons
Olive Oil, Extra Virgin 2 Tablespoons
Basil, Fresh
Salt
Black Pepper
Directions
Clean and cut eggplants into small cubes. Clean and grate onion. Place it in a non-stick frying pan with little water on medium heat. Cook onion until lightly soft. Add cubed eggplants and stir for about 1 minute. After that, add plum tomatoes with a pinch of salt, some black pepper, 2 tablespoons of olive oil and a few leaves of fresh basil. Cook for about 15 minutes, turn from time to time.
In a large pot, add water and some salt. Bring to boil and add pasta. Cook until 1 minute before the end of the cooking time indicated on the box.
Drain pasta and pour it back into the cooking pot. Pour the eggplant sauce over the pasta with 3 tablespoons of ricotta and 1 tablespoon of raw olive oil. On low heat, turn for about 1 minute. Pour pasta into dishes and serve.
