Get yourself a sack of bullfrogs.
Kill frogs with big knife.
Gut.
Chop off heads. Discard.
Keep down breakfast.
Put frog in boiling water for 30 seconds to get the skin to come off.
Rub off the frog skin. Wash frogs in cold water.
Cut frogs up. Cut off feet and hands. Cut frogs in half. Cut off legs.
Salt your frog bits and add cooking wine.
Get yourself 2 dozen garlic cloves (whole), two sliced red peppers and two green peppers (chili for Hunan, sweet for America), a handful of presoaked mushrooms with the tops cut off (see last recipe for details), pieces of ginger sliced, and half a dozen garlic bolts sliced diagonally.
Now get two ladles of oil real hot. Cook your frog bits in hot oil for 1 min. Drain out oil and set frog bits aside.
In light oil fry up mushrooms and garlic with salt, MSG, and sesame oil.
Put in frog bits, peppers, a bit of chicken bouillon, a little cooking wine and some water for broth.
Let boil and simmer on high. Shake every 30 seconds. Take off heat after 2 minutes.
Add black pepper and Chinese prickly ash (I had never heard of it before but they have a lot of it here.)
Pour into serving dish, add garlic bolt.
